Friday afternoon, 3:16pm update

Just got back from Cash & Carry, my new favorite store in the world (thanks Big J et al. for the tip). Costco, do you know about this place? Sure, I can't get a couch or tires here, but no membership fees. And the prices are definitely cheaper.

And such MEAT. Scored an 11-lb brisket (the smallest one there) to do up nice for football watchin' at Betsy and Steve's tomorrow.

Checklist:
  • scary work project that took me far too long: done

  • boss: (at least temporarily) happy

  • hookey: bein' played

  • brisket: marinatin'

  • alarm for 3am so that I can get up and start smoking the thing tomorrow morning: set

  • laundry: tumblin'

  • coltrane: gently rollin' out my speakers

  • couch: comfy

  • rain: softly patterin'

  • nap: about to be took

The one out in Gresham?

Cash & Carry is awesome. I just bought 50 pound bag of killer flour (better than anything you can get at a grocery) for around 15 bucks there. I love it.

Turns out there's one about 3 miles from my house, up near Portland Meadows. I like that even though they have mostly bulk, it's not all bulk. Like you can buy one can of soup, or a vat of it.

I always take people into the deep freezer- which they keep at 20-40 below, so they can feel what it's like to live in Fairbanks. cheekyassmonkey lasted about 15 seconds in there before scampering out.

Uh, at 11lbs, and at 1 1/2 to 2 hours per pound, shouldn't you put it in now? Unless, you're going to cook it on high or something.

I do an hour per pound at 220, but I also short-cut that by wrapping in in foil after a few hours and braising it in an oven. Unless you have a water smoker, wrapping it after 4-5 hours helps prevent it from drying out.

Well, I know people with your grill that just put a pan of water in their smokers and that works for them. -shrug-

Haven't tried that, but I do spritz every couple hours with a mixture of bourbon, apple juice, and water.

Tell you what, give it a try tomorrow and let me know what you think.
