The ingredients are simple. For each date, a small dollop of goat cheese (maybe 1/2 T), a half a strip of bacon, and an almond, is needed. And the almonds are optional.
Pit the dates by making an incision along one side. This is a sticky process.
Squish the goat cheese inside. Easier if you let it get to room temp, or have a pastry bag.
Nestle an almond inside. Or not, for example, if your girlfriend notes that
the almond takes up volume that would otherwise be cheese.
Wrap each in a half-strip of bacon, secured with a toothpick.
Bake at 500 until bacon is crispy (10-15 minutes).
Remove the toothpicks after cooling, and serve.
Note: I used Medjools, but the taste of the date tends to overpower the smokiness of the bacon and the tanginess of the cheese (even in the almond-free ones). I liked the crunchiness of the almond, but I'm not sure what to try to balance out the flavors more.
